Traditional Caesar Salad

Instructions
  1. Select the best centers of the apricot lettuces and place them in a bowl with ice and water to keep them crisp, firm and fresh. Drain the excess water. Finely crush the garlic.

     

  2. With a pot bring the water to a boil. Cook the egg for 2 minutes and then cool. Open the egg and keep the yolk.

     

  3. Place the well-drained lettuce centers in the salad bowl.

     

  4. Serve the following ingredients in ramekins: grated Parmesan cheese, egg yolk, Dijon mustard, minced garlic, a third of a lime, olive oil, bread croutons, fine salt and anchovy fillet. Whole black pepper should be served with the grinder.
