Shrimp Aguachile

Instructions
  1. Cut and flatten the butterfly shrimp so that it is not too thick.

     

  2. Place the shrimp in the cold presentation dish, add the finely filleted red onion and the peeled cucumber, seeded and cut into a half moon.

     

  3. Bathe everything with the Aguachile (a mix of lime juice, sliced green Serrano peppers and salt to taste) and season with the sea salt and ground black pepper.

     

  4. Garnish with the slices of serrano pepper finely filleted at an angle, and sprinkle with chopped coriander.

     

  5. Season with olive oil and accompany with tortilla chips (totopos).

     

  6. Present the dish as shown in the photograph.
