Catch of the Day & Chicharron Ceviche

Instructions
  1. Cut the fish into 1x1 cubes and place it in a bowl with the sea salt, stir constantly to cure it, wait 2 minutes.

     

  2. Add the cucumber, onion and tomato in brunoise, mix everything well, add the olive oil and finally the lime juice.

  3. Mix well.

  4. The seasoning is rectified, it is mounted on the plate and small dots are made with the nipple of the avocado mousse and the mayonnaise.

  5. Garnish with the creole cilantro, the jalapeño slices and the radish.

  6. Finally, add the pork rinds (chicharrón).
