Flamed Shrimp with Mezcal

Instructions
  1. Season the shrimp with sea salt and ground black pepper.

  2. Hydrate them with garlic oil, place them on the racket and roast them on both sides until tender (about 2 minutes on each side).

  3. Place the pineapple and green tomato sauce on the plate diagonally.

  4. Place the roasted shrimp on top of the sauce and sprinkle with the chopped cilantro.

  5. Serve with roasted red serrano peppers and a roasted green lemon half.

  6. Present this dish as shown in the image.
